Our cheese factory uses the freshest cows milk from nearby Yarra Valley dairy farms and goats milk from the neighbouring region of Mansfield in the foothills of Victoria’s High Country Alps.
Our matured cheeses are created with the vast knowledge and experience gained locally and in Europe by our amazing cheesemakers. They all go through a traditional process in our maturing room, with the delicate white mould breaking down the centre, producing a creamy, velvety texture. The end result is rich, well rounded cheeses with full flavour and good length.
