Delatite High Ground Pinot Grigio is the third Pinot grigio from Delatite and is made from 80% King Valley/local fruit and 20% from our own vineyards. These were picked a little earlier than for our Estate gris and so retains more natural acidity and more delicacy. The grapes were whole bunch pressed and after a natural wild yeast fermentation the wine spent a further six months on lees in stainless steel.
It's ideal with mussels, shellfish and chilli prawns.
